Recipe: Simple Freezer Cookies (No-Bake, Vegan, Minimal Ingredients)
For those that don’t know, I’m exclusively breastfeeding my baby daughter — and I thought, for fun, I’d check out lactation cookie recipes.
To my surprise, all the lactation cookie recipes were SUPER similar to my three-ingredient freezer cookies that I’ve been eating or years.
So I stuck with what I know—except I added a few things to these freezer cookies (the chia seed, coconut, and cocoa nibs) to boost my nutrition during these breastfeeding days.
These cookies are super simple, filling, and delicious for a guilt-free dessert snack.

INGREDIENTS
1-2 very ripe bananas (depending on size)
1/4 cup natural peanut butter
1 TB agave nectar (or maple syrup/honey)
1/2 cup rolled oats
1 tablespoon chia seed
1 tablespoon shredded coconut
2 TB cacao nibs (or chocolate chips)
Pinch of sea salt (I also like to top with Maldon salt)
DIRECTIONS
Smash banana into a bowl using a fork.
Add peanut butter and stir together until smooth.
Add agave to the banana/PB combo and stir together — these are the “wet ingredients.”.
Add rolled oats, chia seed, and coconut, and salt until combined thoroughly.
Mix in the cacao nibs.
Form into little balls using an ice cream scoop or spoon, top with more cacao nibs and salt, and place in the freezer for a few hours to form into freezer cookies.
