INGREDIENTS
1/4 cup chia seeds
1/2 cup coconut milk (full fat in can)
1/2 cup unsweetened almond milk
1/4 cup pumpkin puree (in can)
2 TB maple syrup
1 tsp pumpkin pie spice
1/2 tsp vanilla extract
optional toppings: whipped cream, pumpkin seeds, or crumbled graham cracker
DIRECTIONS
Mix all the ingredients together in a bowl until everything is well-combined. Yep, it’s that easy.
Cover the bowl and place it in the fridge for 3+ hours.
