No worries, friends—I got you covered. I bring you this killer pumpkin spice chia seed pudding recipe to cure your cravings, without the sugar, while filling you up with great fiber and omega-3’s. Honestly, this is just as great for breakfast as it is for a little snack or dessert.

Top it with whipped coconut cream (or regular whipped cream, whichever you prefer), toasted pumpkin seeds, or even a crumbled graham cracker for extra indulgence.

INGREDIENTS

  • 1/4 cup chia seeds

  • 1/2 cup coconut milk (full fat in can)

  • 1/2 cup unsweetened almond milk

  • 1/4 cup pumpkin puree (in can)

  • 2 TB maple syrup

  • 1 tsp pumpkin pie spice

  • 1/2 tsp vanilla extract

  • optional toppings: whipped cream, pumpkin seeds, or crumbled graham cracker

DIRECTIONS

  1. Mix all the ingredients together in a bowl until everything is well-combined. Yep, it’s that easy.

  2. Cover the bowl and place it in the fridge for 3+ hours.

  3. Top it off with any of the additional toppings described above.
