Plus Recipe: My Simple Health Cookies
To avoid unnecessary indulgences, I don’t buy junky foods at the grocery store. If I have a bag of cookies, my husband I will eat them all pretty quickly.
I don't buy desserts, but I do make them! And I make them healthier with only a few simple ingredients. So if I eat more than one (or two), I can leave the guilt behind knowing that I am consuming raw foods with only natural occurring sugars.
My go-to dessert is my Simple Health Cookies. I’ve published this recipe on my Instagram, and received so much love about them, so I thought they should live on my website as well.
Here is the recipe!
Simple Health Cookies
1-2 ripe banana (one if its large, two if they’re small)
2 TB of peanut butter
2 tsp of honey or maple syrup
1 tsp of salt
1 1/2 cups of rolled oats (sprouted oats are optimal for digestion—I love these).
Optional: Cacao nibs, sugar-free chocolate chips (I love Lily’s), Coconut Chips (love Dang’s unsweetened coconut chips), chopped nuts, etc.
Directions: Mash the banana, mix in the PB, honey, and salt. Stir in the oats, and then add the optional ingredients. Use an ice-cream scoop to spoon the cookies onto parchment paper.
You can freeze these cookies (my preference) or bake them at 400 degrees for 12 minutes.
