Recipe: Protein Pancakes (Sugar-Free)

If you’re like me, you want the the satisfaction of a carby pancake—but don’t want the sugar crash that comes thereafter. Try these protein pancakes that actually satisfy hunger with protein and no sugar.

So good—taste and hunger wise! I like to top my pancakes with almond butter and banana, but feel free to add a little traditional maple syrup (my husband’s preference).

I prefer nut butter because (1) it’s delicious, and (2) the good fat of the nut butter helps prolong the digestion of the protein.

INGREDIENTS

  • 1 scoop (2 TB) of vanilla protein (I use Paleo Pro)

  • 1 TB almond flour

  • 1/2 tsp baking soda

  • Splash of almond milk

  • 1 egg

  • Dash of cinnamon

  • Pinch of salt

  • Optional toppings: almond butter, maple syrup, sliced banana, blueberries.

DIRECTIONS

  • Mix all the dry ingredients together (protein powder, almond flour, baking soda).

  • Combine the wet ingredients into the dry mixture (egg and milk).

  • Pour into a nonstick pan, and wait until the top bubbles slightly (usually takes four minutes or so).

  • Once you see bubbles, flip the pancake and cook for another 2 minutes.

  • Serve with another dash of cinnamon and any additional toppings you prefer (I love almond butter and banana).
